8 ounces ground beef, bulk pork sausage, or

vegetarian beef substitute

1 cup sliced fresh mushrooms or one

6-ounce jar sliced mushrooms, drained

½ c chopped onion (1 medium)

1 glove garlic, minced, or 1/8 teaspoon

garlic powder

1  14 ½ ounce can chicken, beef, or vegetable

broth

1¾ cups water

1 6-ounce can tomato paste

1 teaspoon dried oregano, crushed

½ teaspoon dried basil or marjoram,

crushed

¼ teaspoon pepper

6 ounces dried spaghetti, broken

¼ cup grated Parmesan cheese

In large saucepan cook the ground beef, pork sausage, or meat substitute, fresh mushrooms (if using), onion, and garlic till meat is brown and onion is tender. Drain fat (if using meat).  Remember, if using meat substitute use olive oil for browning.

Stir in the canned mushrooms (if using), chicken, beef, or vegetable broth, water, tomato paste, oregano, basil or marjoram, and pepper.  Bring to boiling.  Add the broken spaghetti, a little at a time, stirring constantly.  Return to boiling;  reduce heat.  Boil gently, uncovered, for 17 to 20 minutes or till spaghetti is tender and sauce is of the desired consistency, stirring frequently.  Serve with Parmesan cheese.  Makes 4 main-dish servings.
